Chatting with "The Bone Collector"

Bone Broth 101

This week on Wellness Wednesday we had the pleasure of chatting with Jill Weaver owner of Stock Exchange Bone Broth a Waterloo based company that makes small batch, artisan bone broth. She was also recently featured in Edible Toronto!

To learn more about: How Jill got started; how she produces her product; and what sets her product apart; Be sure to give the video about a watch and hear her tell you all in her own words!

We've all heard it when we are feeling under the weather- get some
rest and a bowl of chicken soup to feel better. But the question is, is the whole chicken soup thing just an old wives' tale or is there actually some validity? Well, a group out of The University of Nebraska wondered the same thing, so they took a look at the effects of chicken soup and why it would be beneficial to upper respiratory tract infections (coughs, colds and flus). They found that:

"Chicken soup significantly inhibited neutrophil migration and did so in a concentration-dependent manner. The activity was present in a non-particulate component of the chicken soup. All of the vegetables present in the soup and the chicken individually had inhibitory activity, although only the chicken lacked cytotoxic activity. Interestingly, the complete soup also lacked cytotoxic activity. Commercial soups varied greatly in their inhibitory activity. The present study, therefore, suggests that chicken soup may contain a number of substances with beneficial medicinal activity. A mild anti-inflammatory effect could be one mechanism by which the soup could result in the mitigation of symptomatic upper respiratory tract infections."

Regardless of whether you are actually feeling under the weather or not, a good dose of bone broth can relay a load of health benefits in addition to the anti-inflammatory effects. Bone Broth provides:

Protein

Glycosaminoglycans (GAGs)

  • GAGs are a group of carbohydrates including hyaluronic acid, chrondroitin and glucosamine.
  • Glucosamine supports joint health, flexibility and comfort.
  • Hyaluronic acid is found throughout connective tissue, skin and neural tissues and promotes healthy aging, cell rejuvenation and skin firmness.
  • Chrondroitin supports healthy inflammation response as well as cardiovascular health, bone health, skin health and healthy cholesterol levels.

Bone Marrow

  • Bone marrow is actually considered an organ meat which means it is incredibly nutritious.
  • Bone marrow is also immune rich and can provide immune factors.

Minerals

  • Bone broth is also a source of calcium, magnesium, potassium and phosphorus.
